Wash with warm water and mild soap; dry immediately after use. Oil with food-grade mineral oil or beeswax monthly to maintain finish. Hinoki naturally darkens over time, developing character. Safe for raw fish, cheese, and vegetables. Use a sharp knife to avoid splintering.
