About this craft
Fukamushi is a deep-steaming technique unique to Shizuoka tea production, particularly the Kakegawa region. First-harvest leaves steeped longer in steam than standard asamushi (light-steam) create deeper umami and a darker liquor—a hallmark of Japanese high-grade sencha.
