Kiya is one of Japan's oldest coppersmith houses (Edo period). The hand-chiseled daikon grater (oroshigane) is a traditional Tokyo craft. Each tooth is individually cut by chisel, creating an irregular surface that grips and shreds rather than shears—a technique refined over centuries.
Description
Handmade Tokyo copper grater for daikon and fine condiments
Hand wash only; do not soak. Pat dry immediately after use to prevent water staining. Store in dry place. Over time, copper will develop a natural patina. Polish with soft cloth if desired. Do not use dishwasher or abrasive scrubbers.
